What you need:

  • 1 lb Chicken Sausage
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 2-3 cups diced, frozen potatoes
  • Garlic, red pepper flakes, parsley (optional)
  • 1-2 eggs

Instructions:

  1. Turn a pan with oil to medium heat. When hot, add potatoes, cover, and let cook for 10 minutes. Turn potatoes only once.
    • The potatoes should cover the bottom of the pan in a single layer (Follow the directions on the bag)
  2. Cook sausage in the air fryer (or in a separate pan) then cut into ~1 inch pieces
  3. While the potatoes and sausage cook, dice the pepper and onion.
  4. Add garlic, red pepper, and any other seasonings you like to the potatoes, along with the diced veggies.
  5. Once the onions start to become translucent, put the sausage back in and cook for 1-2 minutes.
  6. Fry an egg. Dish up the sausage hash and put the egg on top of the hash. We like to leave the yolk runny!
  7. Enjoy!

Optional: Dice a whole potato instead of using frozen. Shred some cheese and melt it on the sausage hash before you dish it up
